Any diet that asks you to go low carbohydrate and use only low carbohydrate vegetables is telling you that you need to hunt for vegetables that are low in carbohydrates. You need to use these vegetables in stead of your regular vegetables. There are many great tasting meals that you can make with low carb vegetables.
